Each day, Señora Estela Salas Silva leads the group in a 2.5 to 3 hour hands-on cooking class, using recipes learned from her grandmother, Chef Doña Eulogia Silva Castillo. Customizing her instruction to match the experience level of each individual, Señora Silva imparts the intricacies and secrets of traditional Pueblan meals, such as almond chicken, and dishes crafted by her family, such as chipotles in conserva.

Each lesson also recounts the region's history, from pre-Hispanic times up to the present, then concludes with a scrumptious three-course meal. There will also be time to take a tour of historical Tlaxcala, Mexico, a former Spanish colonial city filled with monuments, museums, and picturesque ruins. The town captivates with history at sites such as the former Capilla Real de Indios, built in the 16th century, and the Holy Cross Fountain, a gift of Spanish King Phillip IV in 1646.

Another first-hand culinary experience awaits at the city market, where a local chef leads the group in selecting fresh produce and demonstrates how to build an entire maze out of corn tortillas.
